Healthy Tuna & Cheese ‘Noodle’ Bake

✅low fat
✅low in carbohydrates 
✅low sugar

INGREDIENTS

  • 1 pouch of Slim Noodles – see here
  • 1 Tin of Tuna in spring water
  • 25g low-fat cheddar cheese
  • 200g tinned tomatoes
  • 2 tbsp Total 0% yogurt
  • 0.5 tsp dried Italian herbs
  • 0.5 tsp Salt & Pepper to season
  • 1/2 Onion
  • 40g sweetcorn
  • 1/2 a broccoli
  • Spinach

DIRECTIONS

  1. Brown the onions in a pan with some water and Fry Light Oil
  2. Boil broccoli and spinach
  3. Drain tuna
  4. Drain broccoli and spinach when cooked
  5. Follow noodle instructions
  6. Mix the herbs, onions,  total 0% and seasoning into the tinned tomatoes
  7. Pour this into a large mixing bowl and mix with the tuna, sweetcorn, veg and noodles
  8. Pour this into a china pasta dish and sprinkle the grated cheese on top
  9. Bake for half an hour , grill for the last 5 mins

Baked Chicken & Pesto Polenta 

Ingredients

1 cup Mixed vegetables

1 Chicken breast

1 tsp Pesto

1 tbsp low fat cream cheese (Philadelphia)

50g Polenta

1 slice low-fat cheese

Directions

1. Cook the chicken breast and then chop up into slices

2. Boil the vegetables and drain

3. Heat 200ml water in a pan and when it starts to simmer immediately add the polenta and make sure you keep stirring.

4. Add the fromage frais and pesto and stir.

5. Add the chicken and vegetables and mix into the polenta

6. Pour into your dish and sprinkle with cheese.

7. Put the dish a pre-heated oven 200 degrees for 20 mins , then switch on the grill and pop under for 5 mins so the cheese bubbles and you get a nice crispy too!

Potato and prawn layered pie with garlic & herb Philadelphia topped with cheese

Serves 1
Ingredients

5-6 new potatoes (depending in size)
100g cooked & peeled Prawns
Bag of fresh Spinach 
2 tbsp of Peas (frozen or tinned)
Grated low fat cheddar Cheese
Spray cooking Oil
35g light garlic & herb Philadelphia 

Directions 

1. Place potatoes in boiling water in a saucepan on a medium heat. 
2. Once they are nearly cooked add peas and spinach. Leave to boil for 5-8mins.
3. Drain the potatoes and veg but make sure you preserve 2 tbsp of the hot water.
4. Mix the Philadelphia with this water using a fork and whisk like you would an egg. It should melt and form a sauce.
5. Spray a dish with oil then chop the potatoes into thin slices.
6. Layer half the sliced potatoes on the bottom of the dish then mix the prawns and veg together and pour over the sliced potatoes.
7. Pour the Philadelphia sauce over this and then place the rest of the sliced potatoes over the top to form the top of the pie.
8. Spray the top layer with oil and then sprinkle the grated cheese on top.
9. Place dish in a pre-heated oven at 250 degrees and leave for 20 mins.
10. Take out the oven and put into a pre-heated grill for 5 mins so the potatoes go crispy and the cheese bubbles!

Cheesy Tuna & Potato Frittata

You are in a rush but need a quick healthy meal? The Fritatta is for you! You can make so many different Fritatta’s -from vegetable, cheese, ham, salmon, tomato and cheese, ….the list goes on!

The word “frittata,” which derives from the Italian verb “friggere,” or “to fry,” connotes the simplicity and pleasures of cucina povera—the “humble cuisine” that most of us innately love. Egg is the main ingredient. With its high protein and mineral content, easy availability and low cost, eggs are an essential part of the diet almost everywhere in the world.

As long as you have eggs and milk in the kitchen (and who doesn’t?!) you have the base of the recipe.

You can have some carbohydrates with it by making it with potatoes or even noodles! Click here  for some great recipes for inspiration…

SERVES 1

1 potato (sweet or jersey)

Tin of tuna

Frozen vegetables (70g)

Oil

5 tablespoons milk

2 eggs

Grated cheese (cheddar or parmesan, amount depends on you)

To make this a G-free, D-free recipe, use rice/soy/almond milk and ‘Sheesh’ or Lactose free cheese (if you can tolerate)

Instructions

  1. Drain Tuna
  2. Beat 2 eggs (or egg whites) with milk, salt & pepper and a handful of grated cheese
  3. Cook (microwave or hob) frozen vegetables
  4. Boil potatoes until tender
  5. Drain and slice potatoes
  6.  Oil a baking dish or pan
  7. Place sliced potatoes across bottom of dish or pan
  8. Scatter over the cooked vegetables
  9. Poor over the egg/milk/cheese mixture
  10. Place in pre-heated oven or on hob and let cook for 10mins
  11. Sprinkle some more cheese on top and let cook for another 10 mins – time depends on hob or oven and what temperature.Image
